We specialize in growing organic/non-GMO Oyster (pleurotus oustereatus), Shiitake (lentinula edodes) mushrooms and Lions Mane (hericium erinaceus). Our mushrooms are available to restaurants, individuals and markets throughout the CSRA.

Shiitake mushrooms (Lentinula edodes) have been a popular ingredient in Asian cuisine for hundreds of years. Their brown caps have a dense meaty texture and a delicious smoky flavor when cooked; the stems are generally too tough and are removed before cooking. Available fresh or dried, they are popular in stir-fries and as a side dish. They are often used as a meat substitute in vegetarian dishes.

Shiitakes are prized for their flavor as well as the health benefits they offer. They provide a wide range of dietary vitamins and minerals, and are thought to have anti-carcinogenic, anti-inflammatory, and anti-microbial properties, and they strengthen the immune system.

Oyster mushrooms (Pleurotus oustereatus) are so named because they look and taste a little like oysters. Velvety and trumpet-shaped, oyster mushrooms have delicate brown, beige, white, or gray caps on gray-white stems. In the wild, they grow on logs, fallen wood, and trees. Oyster mushrooms have been cultivated for less than 100 years, and are used in many Asian dishes. Their peppery flavor is mild when cooked, and they are especially popular when fried.

Scientists continue to research the potential health benefits of oyster mushrooms. They contain anti-oxidants, and eating them appears to lower triglycerides and the LDL/HDL ratio. They are also thought to have anti-tumor and anti-inflammatory properties.
